Banana Cream Pie (Also Coconut variation!)

2/3 cup sugar
1/4 cup cornstarch
1/2 tsp. salt
3 cups milk
4 egg yolks
2 T. butter
1 T. vanilla, plus 1 tsp.
2 bananas

In medium saucepan, combine sugar, cornstarch, and salt.  Mix milk and egg yolks in separate bowl, add to dry mixture in pan.  Boil for one minute while stirring with a wire whisk.  Take off heat and add butter and vanilla; mix well.  Slice bananas and place on bottom of cooked pie shell.  Pour hot mixture over bananas.  Put clear plastic wrap on top and chill.

For coconut cream pie: decrease vanilla to 2 tsp. and add 3/4 cup flaked coconut.
