The Best Carrot Cake

3 eggs
3/4 cup vegetable oil
3/4 cup buttermilk
2 cups sugar
2 tsp. Vanilla
2 cups of flour
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 8-oz can of pineapple untrained
2 cups grated carrots
1 cup raisins
1 cup chopped nuts
1 cup coconut

Bake at 350 in a 9x13 pan for 50-55 min. Top with cream cheese frosting when cooled.

Cream Cheese Frosting
8 oz cream cheese, softened
1 tsp vanilla
16 oz. Powdered sugar
2 Tbsp heavy cream
Cream together.
