Fruit Cobbler (blackberries are my favorite)
2 cups sweetened fruit
1 cup sugar
1 1/2 cups flour
2 tsp. baking powder
dash of salt, dash of cinnamon
1 cup milk
1/4 cup butter (1/2 stick)
Melt butter in pan. Mix dry ingredients in large bowl, and mix in milk and egg. Pour batter on top of melted butter, and then dump fruit on top.
Bake about and hour at 325 degrees (glass pan) 350 degrees (metal pan) (I'd check it at 45 minutes).
Diabetic-Friendly Version: substitute splenda for sugar, whole wheat flour for white flour, and soy milk for regular milk.
