Whole Wheat Pancakes

2 cups whole wheat flour
1 Tablespoon baking powder
3/4 tsp. salt
3 Tablespoons sugar
3 Tablespoons oil
2 eggs separated
2 cups buttermilk (or 2 cups milk + 2 Tablespoons vinegar)

Mix all dry ingredients.  In separate bowl, mix wet ingredients (not egg whites).  Mix wet and dry and set aside.  Beat egg whites until stiff; fold into mixture gently.  Cook on griddle.
