Double Pie Crust

2 1/2 cups flour
1 tsp. salt
1 cup shortening
Cold water

Mix flour and salt together in large bowl.  Cut in shortening until you have dime-sized pieces.  Slowly add COLD water and mix with a fork until all the flour is moistened (but not too wet!)  Chill dough in freezer for a few minutes before rolling out.

For single crust: Halve recipe above, poke crust with fork after it's in the pie plate for better cooking.  Bake at 450 degrees for about 10 minutes, or until golden.
